What the best recipe yall got for grilling Amberjack

The last time I did it I just used salt and pepper, olive oil and lemon juice. I didn't grill but smoked it and it came out very good.

I brine and smoke mine. AJ is a bit fishy to not add a good bit of flavor to.

Put 'steaks' in a zip lock with Italian dressing and two squeezed limes. Let them marinade for a while (hour or so)
Remove them, season with whatever you want
Grill on aluminum foil until the fish begins to flake
remove from the grill and squirt it with lemon juice

Butter, salt, pepper, lemon pepper, onions.
Get a fish basket or tin foil.
Get the grill pretty hot.
