What vegetables do you put in your Jambalaya?

Vegetables to choose from:

onion
bell pepper
green onion
celery
garlic

Fruits NOT allowed to choose from:
tomato

Jambalaya is one of the only cajun dishes I do not use the trinity on. Bell Pepper and Celery I dont find does anything for it.

I use onion,green onion and garlic.

Parsley would go in only as a garnish, which as so little cooking of it is done GO is in fact.

Watch out! There are some jambalaya police out there that will see some red in the pot and try to report you for creole-ing the jambalaya.

(Personally, I love a little sweetness from the red bell pepper. I do agree with the sentiment that celery doesn't add anything good.)

Just curious can you really taste the shallots in a jambalaya? Seems like if you put onions in the taste of the shallots would have no chance to come through.

I can taste the end close to the roots but really just do it cause the recipe calls for it.

I use trinity plus green onion and red bell pepper

Usually use chicken stock or half/half stock/water for the liquid to cook the rice

Never put garlic in it but I'll probably do that next time

Serranos for me. I like to put multiple types of heat in my food.
