What’s a normal or reasonable price for ox tails?

I’ve been thinking about trying my hand at some but a little sticker shock at WinnDixie changed my mind. $23 for two, they were nice sized but that was just too much. I haven’t checked our local AG store yet but I wasn’t expecting them to be that expensive.

My local HEB has them right now for $7.96 a pound.

They were always expensive, but in the past couple of years, oxtails became real trendy. Like chefs putting oxtail on burgers or making birria oxtail tacos. There was a New York Times article a couple weeks ago about that. Plus there are only like 4 pounds of oxtail per cow

An oxtail stew is really good. Throw that in a slow cooker with some butter beans - that’s a good meal.

Unless you're in like Bangladesh chances are good you're just getting run of the mill cow tails. Or steer tails. Since the advent of the internal combustion engine, and John Deere's contributions to mechanized farming, oxen and other beasts of burden have become obsolete.

Yes, Lightly flour them, brown, and set aside while you get the other things going. Be sure to include coconut milk for a Caribbean style stew.

Oxtail Osso Bucco is pretty good too. This recipe is for a grill, but it works fine in the oven:

Back when I was a kid my mom would use ox tails for vegetable/beer soup and they were cheap as could be, just like chicken wings once were.

Then it got trendy, again, just like chicken wings and the prices have gone through the roof.

I wanted to make some soup using ox tails about a year ago and damn near had a heart attack when I saw the price. At the time I could have bought choice steaks for that price.

Back in 2020, you could find them for $5.49/#. In this current economic environment, you will be lucky to find them cheaper than $9/#.

This guy Les BBQ does smoked and braised oxtails that look amazing. I really want to try his method.

His YouTube is full of good content.

Yes, lightly floured in seasoned flour.

I’ve put them straight in the crock pot before when I’m short on time and they’re good, but much better if you can flour and brown them.

I've only ever had ox tail at a now shuttered local Jamaican place in some kind of Jamaican coconut yellow curry. Damn good. I don't have any recipe for it, but I would recommend OP explore that route. I haven't had ox tail any other way so I don't have a frame of reference, but I can't imagine there being a better way, that's how good it was.

I don't know their recipe at the Jamaican restaurant but just by looking at it, the one in the link is a bit busy. The one from the Jamaican restaurant appeared, to the naked eye, to be much simpler and served over rice, not a stew. Also, it wasn't particularly hot-spicy, but extremely flavorful. So I don't know about the scotch bonnet or habanero idea. But might be awesome? Also, that "author" just says "curry powder" but there are many kinds of curry. If you go looking for curry powder, look specifically for Jamaican Yellow curry. Also also, maybe I skimmed the recipe too fast, I don't recall seeing coconut but i might have just missed it in my skim.


eta this is one we keep in the spice cabinet and really good
