Kamados has an Alaska roll which is pretty good. But my fav is the cali roll and the spicy tuna roll.

For just sushi rice and sashimi, any good+ quality tuna will do.
For a roll, I like tuna, crunchies, and avocado. Usually have to ask for it at the bar, because sushi menus seem incapable of mixing crunchy with raw tuna these days. Sometimes I like aspargus instead of/with the avocado.

Volcano roll - Spicy tuna roll topped with mounds of snow crab, then sprinkled with crunchies and then a spicy mayo sauce.
Also love the Black and Gold roll at Sushi Bros. It has fried scrimps and mango in it.
