I've had some recently from a buddy that went fishing and it was great. I tried some from fresh market and it was awful. Just looking for some better options on the north shore

I bought some from Rouses Yesterday for $6#, it was pretty good.

I get mine from Rouses too. They are previously frozen however. The best was from Off the Hook. If Jason sees this thread perhaps he could chime in.

Where are you located? That might help.
I bought some tuna steaks at Bergeron's in Port Allen a while back. They were actually pretty good.

This doesn't surprise me, but do you know how to tell if its really fresh?
Tuna is really easy to tell if its fresh because of the way its cut into steaks and the large striations in the meat. The meat should look moist and glistening, the color should be bright pinkish/ red and not brown or look faded, the meat should look very firm and not flaking, and it should not smell fishy.
I saw some really good looking tuna at my grocery store the other day but they get stuff from a local person fairly often. I've also seen tuna that looked terrible from some normally great seafood markets.

Rose's in Kemah. AAA tuna. It looks fake, but it is the best part of the best tuna. 11.99/lb.
You have to go to Rose's.

JasonL is the resident expert on retail tuna. The problem locally even in BR is that nobody sells "fresh never frozen" outside of whole foods normally that I'm aware of. I think Maxwell's does occasionally. The grading process is not my expertise either. Whole foods usually charges about $25/lb I believe which isn't awful if you get two 8 oz steaks.
And the "sushi grade" tuna is a marketing gimmick.

Not many options (that are good / fresh) I find Whole Foods fish to be always high quality and fresh. I've gotten it at Alexanders and rouses before and have been disappointed in the quality.

My understanding is that if the Tuna isn't fresh off the boat (and you can't verify that it is indeed that fresh), flash frozen on the boat is actually preferred. I would obviously defer to a retail tuna expert, though.

Best option in NOLA area is Hong Kong market on Behrman Hwy on the west bank. HKM buys from local fishermen.....$9/lb or so, usually.

I bought a couple of pounds at Rouses this weekend for $6/lb.
It was very good in my opinion.
I've also paid $17/lb. at Maxwell's.
I didn't taste an $11 difference.
