If you were wanting to make your own cracklin where do you get the skins? I cant think of anyplace that sells it.

There are four Latin butcher shops in town that sell it.
Montana's on Coursey
Juanita's on Muriel
Mi Pueblito on Siegen
La Tiendita on Siegen

Really?? Is there a latin dish its used for or do they just fry them as well??
I figure if I can find a pork shoulder with skin still on I can just use that but it seems like most pork readily available is trimmed of the skin down to the fat cap.

Any Latin butcher shop in Louisiana worth its salt sells freshly made chicharrones (cracklins), they make it with their own skins. You can either buy the small and hard rinds, or the giant footlong strips of the stuff.
I was at Montana's two weeks ago, and noticed they had ziplock bags of the small crunchy ones they make at the front counter. They also do a Colombian takeoff on cracklins in their Bandeja Paisa plate.
Stop by any Latin grocery store with a butcher shop, and you'll generally notice the giant strips of freshly prepared cracklins in a bag hanging against the wall.

They will serve you any raw part of a cow, pig or goat that you want. I mentioned the cooked cracklins because you asked what they did with it.

to make it worth your while, you have to cook plenty. i usually get a 50lb box of skin, and it doesn't make what you think. it's alot of stirring [hopefully drinking].
