Looking for a block to make a queso recipe I have and cannot find it locally in walker/denham. Did not see in Rouses or Trader Joe's...

Just get Monterey Jack cheese. It’s basically White American cheese. You could also get Pepper Jack.

recipe calls for 2 lbs. Last time I acutally tried using 1 lb of monterey Jack and 1 lb of pepperjack melted with a double boiler and it was ok, but clumpy, not smooth, and sorta separated from the milk as it cooled during dipping. Thought the white American might actually make a difference...?

Use Velveeta and it wont get chunky or separate.

Interesting I guess it’s worth finding it to find out. Regardless, make sure you use block cheese and not the pre-shredded stuff that is coated with cellulose, calcium, or starch.

Did you try the deli counter? My Rouses has white american at the deli counter. They can slice you a chunk off their block if they have it

Add a smidgen of sodium citrate to make your lumpy cheese smooth.

unless you use american cheese or velveeta which already has the emulsifiers in the cheese, you'll need to add a bit of sodium citrate.

It’s at the deli counter. They have both white and yellow and yesterday it was $3.99 lb. I mix it with cheddar for pimento cheese.

Just go to the deli counter and ask for the amount you need, unsliced. Or they can slice it into bigger chunks so it melts quicker.

LaTienda has the hookup for all of your queso needs.

I’ve bought it at the deli counter at Oak Point in Watson before.
IIRC, the thickest they can cut it is in half pound sections.
