Who has the best Turtle Soup in New Orleans ?

Craving some turtle soup. Give me some opinions?

Restaurant Revolution has a good one as well but I would give the nod to Commander's Palace

If this was a month ago I'd say Brennan's, but ordered it again there on Xmas Eve and it tasted way different.

I love Mandina's. But did you know that they did not use turtle? We asked because of the different texture, and was told they use veal.

Correct. You would be surprised how many places use veal shoulder in place of turtle meat. Especially places like Mandina's who probably serves 100+ gallons a week. Brennan's is another place that does.

I don't think so, unless they are explicitly telling you there is turtle meat in there, and then using something else. And they propably add some amount of turtle meat, or stock to it. I know Arnauds uses a 50/50 mixture of veal and turtle.

A common substitute for turtle meat is alligator jowl meat. Readily available, same texture, and less than 1/2 the price of turtle per pound…. $12 vs. $30 / lbs. I use alligator all the time for my “turtle soup”

Truth-in-Menu laws provide guidelines for menu descriptions, food preparations, services, and pricing to protect consumers.
These align with the federal regulations set forth by the Nutrition Labeling and Education Act.
If a restaurant has Turtle Soup on the menu, unless it is otherwise stated explicitly on the menu that the soup does not contain turtle, then you best believe the soup need to have turtle in it.

Yea, not really. They're just words. How many desserts do you know that carry the name Turtle that obviously don't have turtle meat in them. And as mentioned a dab of turtle meat with your veal, or using some turtle in your stock, easily qualifies you to call your soup "turtle soup".
