Hah hah hah. Yeah, even the first link that comes up on searching that clearly says that Osso Bucco is normally Veal Shanks...

You said that Oxtail was the primary cut used for Osso Bucco and that marrow seeped from it.
This is clearly not the case. Osso Bucco is Veal Shank.

I have NEVER been to a restaurant that used Ox Tail as Osso Bucco. I have NEVER spoken to a chef that has asked for Oxtail with the intent of menuing it as Osso Bucco. If I interviewd 1000 chefs and asked them how to make a traditional Osso Bucco, all 1000 of them would say use Veal Shank. If I asked them for alternatives, they would say Lamb SHANK or Pork SHANK.
So again, your claim that Oxtail is the primary cut used to prepare true Osso Bucco is wrong. Your claim that Oxtail is even a commonly used substitute for preparing osso bucco is wrong. Your claim that the hole in the oxtail is where "marrow used to reside" is wrong.

No... I'm sure it's a fine dish they are preparing. What I'm saying is that you claimed (which you did) that Oxtail is the PRIMARY cut used for Osso Bucco, and even questioned a poster about having Osso Bucco not made with oxtail being a rare occurance.

Our founding father fought and died for us to have freedom. One of those freedoms is being able to choose between veal shank Osso Bucco and steer tail Osso Bucco. Cit prefers the steer tailed version, and I have no problem with that
