Why do we boil crawfish And Crab (thanks) but shrimp dead?

Can one boil crab and shrimp alive?

It is harder to keep crabs alive and basically impossible to keep shrimp alive until time to boil. I've boiled live crabs that we caught.

So it's a logistics problem then? You could boil them alive if you could keep them with no discernible change in flavor/texture?
I know you can't boil dead crawfish.

Absolutely. I don't think I have ever boiled dead crabs. We just ice them down really good till they are pretty much dormant so the claws don't fall off.
Shrimp are a different game. No reason you couldn't boil them dead but they die so quickly it is unlikely you would ever have the option, but it wouldnt affect the boiling.

I only boil live crabs.
I'm sure you could do shrimp live as well if you felt like transporting them in an aerated unit.

Well how long do crabs stay alive on ice? I know I've usually boiled fresh caught ones but I'm sure they don't stay alive as long as crawfish

A crawfish that is dead before you boil it is fine to eat. If the tail is straight after boiling it was dead, as long as the meat inside is firm it's ok to eat, mushy on the other hand.....

They've always been on ice when I've got them. I guess I just assumed they were dead. Didn't move around like crawfish.

Boiling dead crawfish or crabs is not good. They will taste bad and will also be mushy.
The meat in Crabs, crawfish, lobster all deteriorate after dying.

Not true. Deads should be taken out before boiled. There is a reason all seafood markets(the good ones at least) go through every sack before boiling.

Shrimp come out of the net pretty much dead from trawling.
If you had a live bait tank full of live shrimp, you could scoop 'em and throw straight in the pot, but how many people have that laying around the back porch?

Yea, I've never heard of someone purposely boiling dead crabs. There is a little wiggle room, but if it's dead more than 20-30minutes I'd discard it.

Crabs hell yes they can be boiled live. I have never seen them cooked other wise. Shrimp are boiled in a dead state as the catching process kills them. They are nowadays IQF within minutes of being on the boat.

Crabs and crawfish begin to decay very quickly once dead.....has to do with their digestive and excretory organs. The meat will turn mushy and develop an ammonia taste/smell. Both are thus always boiled alive, and neither is peeled or cleaned when raw.
Shrimp, if kept very cold, are fine when cooked dead. Smaller inshore trawlers don't freeze their catch on boat, so you can buy unfrozen, fresh caught shrimp in season if you are close to the coast. In fact, shrimp need to be dead a few hours before you can peel them raw without tearing up the shrimp. Ever tried to peel immediately after pulling em out of a trawl or castnet? Not easy or clean. Gotta hive em down and wait a lil while.
It's common to cook live shrimp in Asia, but the peels are usually left on and either eaten or removed after cooking.
