Which leads to bottles exploding when opened if you don't rotate them properly. Any current or past servers ever see this happen?

But didn't just refill. We collected all ketchups, consolidated the leftover ketchup into just a few bottles, and washed the empties and then refilled them with new ketchup.
So only a few bottles had "recycled" ketchup in them, and since they got stored away and put back on random tables in the morning, they were pretty much being emptied within 1-2 days.

Heinz plastic bottles are not refillable. The other side of this coin is refilling Heinz bottles with generic ketchup from Sysco.

This. I used to have a GF who waited tables at the TGIFridays at Cortana Mall in the 80's. She used to have nightmares about that "ketchup consolidator" and wake up in the middle of the night in a cold sweat.

A lot of "nicer" resturants and majority of resturants connected to hotels give the mini bottles. They use them for to-go orders and room service and just keep them for the resturant when they don't go through too much ketchup. Those little things are not cheap individually and add up quick.
I've managed front of the house in some nicer places. Columns for example uses them.
