Why is uncured pepperoni a real thing?

I'm not outraged by uncured pepperoni or anything like that and to each their own, but I just just think that it tastes rancid. I paid 9 dollars for a souped up frozen pizza the other day and the uncured pepperoni effed it all up and I had buyers remorse after that.

Uncured pepperoni is a real great thing IMO when the butcher knows what he's doing.
In Cincinnati Ohio there's an Italian Butcher shop and the butcher makes his own pepperoni. It is one of the finest sausages I've ever eaten (and I have loved Bavarian sausages made by the butchers there as well as family made pork sausages from the Piedmont of Virginia.)
Some Andouille made in the south of France has more horse meat in it than I can appreciate.
