Would a 3 gal pot be big enough for 5lbs uncooked rice

5 pounds of rice is roughly 10 cups of rice. Using 2 to 1 ratio, that means you would need 20 cups of liquid. So now you are 30 cups. A gallon is 4 quarts, 4 cups is a quart (I think).
So a 5 gallon pot would hold 90 cups (5X16). I'd say even with chicken, andouille, seasoning, tomatoes (or not), you should have plenty of room.
But I suck at math.

In the stickied recipe thread above, there's a jambalaya calculator in the very last post. I don't know how accurate it is, but it may help you.
As far as the rice, 1 cup dry yields about 3 cups, cooked, I believe. Do the calculations to determine what size pot you need to cook the rice.

There are 2.5 cups of long grain rice in a pound.
A cup of raw rice makes 3 cups cooked.
That means a pound of rice makes 7.5 cups of cooked rice (2.5 X 3 = 7.5).
So 5 pounds of rice would yield 37.5 cups of cooked rice(5 X 7.5 = 37.5).
A 3 gallon pot is 48 cups in volume.
You have to account for the meat and some space to turn the rice.
Check out the Jambalaya Calculator for more. You can play around with how much meat you want per pound of rice and the other ratios as well. Notice there is a second tab labeled "classic" - that may be most useful to you.

I just noticed a calculation error in version 3 of the Jambalaya calculator, so I took it down temporarily. I'll put it back up soon when it's corrected.

No, Thats too much rice. I have a 3 gallon pot and max out the volume at about 3.5 pounds of rice. I use a lot of meat though.

In my 15 gal pot I use approx 18 lbs of uncooked rice and that is about as much as possible and still be able to stir. So based on that you would need a 5 gal pot for that much rice. I can feed 100-125 with the 18 pounds of rice so depending on eaters and sides you can probably feed approx 30-35 people.
