Absolutely. I have done it a few times before a party. Saves a lot of time and less mess.

This is what I am thinking. I don't feel like making everyone an individual one but I'm willing to make a large batch of it

Would this be simple syrup and bitters premixed into the bourbon? Then poured over ice.
(Vs just bourbon and simple syrup premixed)

I prep gallons every year for Mardi Gras. Works out really well. I keep them refrigerated in half-gallon glass growlers. Pull them as needed.
Pour over ice, add your prepped citrus peels of choice and a Luxardo cherry, and you're in business.

For something like an old fashioned you can basically just multiply up. Where you can get in trouble is batching cocktails with citrus.
So let’s say your go to old fashioned is a bar spoon of simple, 2 Oz bourbon and a few dashes of bitters. Just multiply that out.
Now one other thing to consider is add a bit of water to your batch to account for dilution of a mixed drink.
Then set out orange peels, cherries, etc for folks to garnish.
