Yellow Onion vs White Onion

What is the best use for each? I usually always use yellow (unless using red onion for salads, fresh toppings etc). When is it best to use a white onion?

Pico?
Fajita toppings?
Gumbo?

I use white in gumbo.

I don't use a lot of yellow onion. I'll do vidalia if I'm making onion rings.

I grew up eating onions like apples.

I can taste a difference, but it's subtle. Yellow is a little sweeter, but not quite to the degree of a vidalia. I think if you tasted them side by side you'd notice a difference.

Cooking with them, I honestly don't think they affect the flavor profile that significantly. Like most people, I use what I use because it's what I'm comfortable using.

You can definitely tell the difference in salsa, IMO
