Your best taco soup recipe

Stepmother is coming home from a long stay in the hospital some some vague illness that caused her to not be able to eat almost anything for the better part of a year. Long story short, she's now able to eat food and keep it down and has a lot of weight to gain to get out of a malnourished state.
I told her to celebrate they can come over and I will cook anything her heart desires for dinner.
She wants taco soup, and I need a recipe to knock it out of the park. She's been through hell and this will be the first real cooked meal she's had and expects to not vomit in about 9 months.
Any good ones out there? No restrictions on meat or anything.

There are some recipes in the recipe book in the stickied thread above. I saw two that were the usual ground beef with lots of cans of beans etc... There's a chicken taco soup. Really depends on what type of taco soup she's had that she likes. I guess you could elevate it with some toppings like cheese, tortilla strips, lime juice, sour cream, jalapenos, avocado and the like.
It wouldn't be my choice for my first meal after having eating issues. It's pretty rich.

Don't have a Taco Soup, but a Mexican Chicken Chowder
I use skinned and deboned rotisserie chickens
One bag of seasoning blend
saute in olive oil and kosher salt
add a can of diced green chiles

add a can of Rotel, drain liquid
add shredded chicken
season with cumin, garlic powder, and black pepper
add enough low sodium vegetable juice to keep it from sticking

stir until mixed and then add the following
one can of SW Corn

one can of each of these DRAINED !

stir until thoroughly incorporated
Add another quart of low sodium vegetable juice
If you need to make more you can add hot water
bring to a boil and add a jar of
once whisked in bring to a boil and lower to a simmer
after an hour add fresh cilantro, cayenne, and salt to taste
it will be thin with flavor then the chowder part comes in
add a large can of refried beans

add 8-16oz of cheese sauce (depending upon how much you make)

whisk in until completely blended and bring to almost boiling
if you need to thicken I use more refried beans or cheese sauce, but you can use Masa or finely crushed tortilla chips
serve with fresh sliced avocado, cilantro, sour cream, and tortilla chips

We were at a small get-together a few months back and one of the apps somebody made was Taco Soup. I tried it and thought it was pretty good. Found out who made it and she said how it easy it was then gave me the recipe.
Those are my changes written in. I also like to use Mexican corn (apologies to the sensitive folks for using the "M" word...you know who you are) instead of regular and a little finely chopped cilantro but that's obviously optional.
Process is simple. Brown and drain the ground meat then add everything into one pot (8-9qt). I simmer it for a couple of hours but I'm sure it would probably be fine going high rolling boil for 45 minutes. Play around with it.

That's the one my grandkids devour. My stepdaughter has been making it since the older one was born. Those two see me put an onion in anything and they won't touch it, but mom's taco soup?

This is my friends' recipe. It's a "cheat" recipe in that it uses various cans of stuff, but it's quick, easy, and super tasty without being super spicy in case that's an issue (if you want to up the spice, use hot Rotel and/or add the jalopeños while cooking).
1 pound ground meat
3 19 ounce cans Progresso Minestrone soup
1 10 ounce can Rotel mild tomatoes
1 15.25 ounce can whole kernel corn
1 15.5 ounce can Trappey’s red kidney beans w/ chili gravy
1 yellow onion (chopped)
3 cloves garlic (minced) (more if preferred)
1 package of taco seasoning mix
cheddar cheese (shredded) (optional)
sour cream (optional)
jalapeños (optional)
Brown meat in a soup pot on medium high. Remove excess liquid. Sauté meat with onion and garlic until onion is clear.
Add minestrone soup and taco seasoning mix. Add tomatoes, corn, and beans with their liquids. Bring to a boil. Cover and simmer on low heat for at least thirty minutes.
Serve with grated cheddar cheese, sour cream on top. Add jalapeños if desired. Makes 8-10 servings. Leftover soup can be frozen.

No not at all. I'm very frugal with the salt b/c of the cheese sauce and the Better Than Bouillon, so it comes out perfect. Now if I were only making a small batch I would just use a couple tablespoons of it and not the entire jar. But the recipe above if for a large batch that serves a dozen people. I always make a lot and freeze the rest for later.

With what you say about her stomach, I'd keep it simple and somewhat mild.

1 envelope taco seasoning
1-1/2 cups water
1 can (16 ounces) mild chili beans, undrained
1 can (15-1/4 ounces) whole kernel corn, drained
1 can (15 ounces) pinto beans, rinsed and drained
1 can (14-1/2 ounces) stewed tomatoes
1 can (10 ounces) diced tomato with green chilies
1 can White Hominy
1 can (4 ounces) chopped green chilies, optional
1 envelope ranch salad dressing mix
Directions
1. In a Dutch oven, cook beef over medium heat until no longer pink; drain. Add taco seasoning and mix well. Stir in the remaining ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 20 - 30 minutes or until heated through, stirring occasionally.
Serve with a little sour cream, shredded cheese and white tortilla chips.

I went with MD's recipe almost to a T except I subbed about 1/4 pound of the ground beef for a very mild beef chorizo and subbed about half the water for beef broth instead. It's cooking down now. I'll come back later with how it turns out. She should be here shortly.
I'm going to take my dad out to Costco while its cooking and load them up with bulk easy to prepare stuff to take the load off of him. Bulk single serving peeled boiled eggs, single serve grilled chicken breast chunks, bulk cases of ensure or protein drinks, that kind of stuff. Doctor's are wanting her to drink 3 ensures a day minimum and otherwise eat as much of whatever she can eat. That's a lot to keep up with without intentional prep, especially when she's too weak to help much.

That's so nice of you. You're right. That's a lot to keep up with and think about. Hopefully, her tummy can handle a lot of different foods now. Quantity may have to develop over time.

That's basically the Paula Dean recipe, and it works well. Ground beef and a bunch of cans + ranch dressing.
