I'm boiling crawfish this evening and was wondering if y'all had any input on the differences/preferences for the three different Zatarain's crab boil seasoning. This is just one component of my seasoning regimen, but I have only ever used the regular one. Is the extra spicy or pro boil any better or are they not worth the extra cost?

I haven't used any Zatarin's powders in a long time, but I used Pro Boil on occasion. It's more flavorful than the regular. The regular was always too salty for me.

Yeah I remember thinking it wasn't bad. I would do a mix of pro boil and Louisiana seasoning.

I'll be adding liquid boil too, the powder is never spicy enough.

Liquid, cayenne, salt...best to keep it simple. I find that's the best way to control what it tastes like, what if they don't have your special mix at the store? There's something about the cayenne and crawfish flavors that are perfect together. I like lemons in there as well.

I hated the pro boil. It had a completely different kind of a flavor that myself and most people I know did not care for. I understand different people have different tastes but I would recommend experimenting on a small batch of something with the Pro Boil if you have never tried it before.

I use either the Louisiana brand or the Extra Spicy if going Zatarains plus some liquid with either.

This may sound crazy, but:

16 oz liquid crab boil
Large jar of cayenne (7.25 oz)
3-4 containers (26 oz) of salt

That's my story...I'm sticking to it.

and the liquid taste like shite. you can taste and smell the defoaming agent in any batch made with the liquid.

That does not sound over complicated. I learned from my dad, who has a recipe intended for NASA. They are great tasting, but I know there has to be easier alternatives. I've had the all in one things before, but I always feel like something is missing.

About a cup or two per pot after you turn off the heat for the soak.

If you're smart you'll buy a gallon of Zat's liquid it seems to be thicker and stronger and has a better flavor.

I love the liquid, I only put it in during the soak though.

No kidding. I didn't get any further than this post.

Pro Boil=

No offense Pro Boil people. I just boiled twice in the last week. I gave the Pro Boil a try after using Louisiana, and I wished I hadn't.
