Zea Corn Grits Recipe (OFFICIAL)

Instructions:
1. To grill corn, shuck off husk. Lightly better corn cob and grill over charcoal or open fire until slightly blackened.
2. Cool corn and cut kernels from cob with sharp knife.
3. Bring chicken broth to a boil. Add heavy cream and return to boil.
4. Slowly whisk in the grits and then the corn.
5. Reduce heat to a simmer and cook 5 to 6 minutes.
6. Add salt and pepper to taste.
7. Garnish with thinly sliced green onions.

It's been around for a long time and it's very good and easy to make. I roast the corn on the grill.

I loved them grits, until I found the calorie count, I won't give it to you, but it is incredible.

damn thats what i have been doing wrong. I forget to lightly BETTER the corn..

Posted a while back. Just as good and a lot less trouble to use white shoepeg corn.

1 cup yellow grits (not instant)
3-4 tblsp real butter
Bring chick broth and butter to a boil.
Add cream, return to boil.
Slowly whisk in grits and then add corn
Reduce heat and simmer 5-6 min
Season to taste with sea salt and pepper

Someone told me this and I tryed it with the same recipe and it was great.
Try skipping the yellow grits and using yellow cornmeal.

Very close. Since I eat at Zea's twice a month I cut out the grits.

Tried this last night.
I did not grill the corn (will next time).
I substitiuted skim milk for the heavy cream and I added a diced jalapeno pepper.
This recipe will be a regular around my house.

what is the serving side on this? 4 people? 8? either way thats a lot of dairy for a side dish

I dont have the specs on it...We eat pretty good in my house and I would say 6-8 large servings..

I use more corn when I make it.
I think a cup of dry grits is about 3 cups cooked. Look on the package of grits. You should be fine doubling it for 12 people if there are other sides and throw in some extra corn.
