Dove weed control

I have what I assume is dove weed growing in my yard, any recommendations how to kill it without killing the grass?

That looks more like nutsedge than doveweed, and both have been germinating in my yard the past couple weeks.
For control of nutsedge - halosulfuron (Sedgehammer)
For control of Doveweed - in this heat, Celsius herbicide at the recommended high application rate. Might have to spray twice a few weeks apart. Atrazine is good herbicide for doveweed control but in this heat could damage/kill your lawn grass

ETA: I know the linked article doesn’t mention Celsius for control of doveweed but the Celsius herbicide label does mention doveweed control at the high concentration rate. As I recall from memory I had to spray twice with Celsius to kill it.
Also be sure to use surfactant in the spray solution of Celsius, although I think the small vials of Sedgehammer may have surfactant incorporated. Just check when you buy.

Agree with above. Looks like Sedge
Can be take care of (perhaps, sedge is a bitch) with Sedgehammer (labeled as Permit for ag use)

Would Celsius also be effective on Spurge, Virginia buttonweed, Lespedza and Dollarweed? I'm having problems with these as well as Doveweed.

Yes it will, and I have all those same weeds. MSM Turf (methsulfuron methyl) will also control those weeds, as a cheaper alternative, but the MSM Turf will not control doveweed. Celsius also does a good job of controlling Green Kyllinga (sedge) that MSM Turf won’t control. Anyway I use them both and you can use both in the heat of the summer without damaging the lawn grass though you may get some temporary yellowing of the turf. Also you need to use surfactant (spreader/sticker) in the herbicide solution to maximize penetration of the herbicide into the targeted weeds.

ETA: I see Spurge is not listed on the Celsius label but I seem to recall from memory it controls it. I know the MSM Turf controls Spurge.
