Expectations for flooring installation cost

I recently bought an older house, and I want to make a few inexpensive updates. I plan to replace about 600 sq. ft. of carpet with simple laminate flooring. I’m going to purchase the material myself, but the job will include:
Moving some furniture
Tearing up old carpet
Installing laminate
Replacing furniture
Two connected rooms and hall.

Best guess hiring out the work: $50/hr x 2 installers x 8 hours x 2 days = $1,600.

IDK about the cost of removal, but I just paid $2.25/sf for install of LVT. That was across 2,200sf and included removal of tile in a kitchen and leveling of the slab in about 1/4 of the house. I did all the removal of previous flooring with the exception of the tile.
Not sure where you are located, but labor is sparse around here right now. You might have to take what you can find. If you aren't capable of moving the furniture and tearing up the old carpet, you might look into finding some high school kids to do that. Doesn't take any skill and you might save a couple dollars.

Was quoted today 7800 on a 3.5ton combo unit.
Paid 5300 for a similar unit last year….

This price is just about spot-on. I would say 1600-1700, shoe molding included.
Oh, and go with lvt instead of laminate.

If you are looking for a complete turnkey job then you need to add installing quarter rounds/base shoes. Also Include painting or staining them depending on your baseboards. And then there is the time consuming cleanup of the floor after you remove the carpet.
If you are furnishing the material, consider using matching transition molding at the doorways of each room. That allows for the required expansion of a floating floor and also laying the planks in a different direction if desired. You will also need 3 mil plastic (visquine) under the new flooring.
With everything you listed and including the quarter rounds, it will probably be a 3 day job and maybe a little more.
And as others have said….use luxury vinyl planking.
