Wondering what type of window treatment (blinds/shades) to go with for our windows. There is zero depth inside the window so any type of flush inside mount is basically impossible. Windows are 33” x 62”.

Looked at getting plantation shutters but the guy said they would look stupid

Roman shades need a depth that is pretty minimal. Be prepared to spend. We did the baby's nursery and they were somewhere close to $900-$1k. We did it through Costco and got a Costco spend card back which was nice.

The ones I saw still needed more than an inch to mount. I’m tempted to say frick it and just go with with cheapo blinds with an outside mount

Don't. We went that route for a minute. Similar, shallow Metairie style windows. Spending the money is worth it. There's got to be something that will work for you.

It’s even worse in the bedroom with a 78” x 52” bay window.

5 of the windows are getting plantation shutters since they are longer and go all the way to the floor and to help curb appeal on the street side of the house

If you really wanted blinds you could retrim it with something like this:

The 1x2 would give you a little more room for the 1 1/2 blinds. or 1 inch.

Looks similar to the window frames we have. House was built in the late 60s and the windows are original wood with separate panes, but the framing is similar on the outside. We found some used shutters that someone was selling locally, and I took the existing frames off of the top and sides and built new framing to support the shutters in our living room. I still have a few more and I'm planning on adding those to our bedroom when we start moving stuff around in there. I'll snap some pics and post them later. I may have some old ones in my google drive that I can post.

I dislike plantation shutters, as they're giant dust catchers and essentially turn windows back into a wall when closed. No bueno.

Look at higher-end roller shades that can be hung outside with a valence/cornice over the mechanism. It's a clean, modern look. Select Blinds online has a bunch of different styles.

Are curtains not an option? Those can be hung well above the window tops, making the room seem a bit taller.

Roman shades would look good there, see if your wife can make them and save a bundle. If she can sew at all she VC an likely do it.

My wife has made several sets for us and siblings pretty easy for me to install.

I used a 1x2 or a cut strip of 1/2 plywood to keep thickness down and just wrapped it in white backing fabric, 2 screws to hang it.
