What type of wood is used for these patio covers?

...referring to the small wooden pieces along the top to provide shade. TIA

That's a type of latilla (lath) open roofing common in New Mexico and the southwest. Traditionally its peeled cedar branches but any species can be used it you treat the branches. If in Louisiana or other damp climate, I would use cedar.

Thanks. I see it everywhere in Mexico for patios at hotels, restaurants....everywhere but I’ve never thought to ask them what they use.

That would work. But aesthetically it becomes more asian rather than southwestern,
