What would be a good vegetable to plant right now?

North Louisiana location
I have about 80 available feet of a brick planter box. It is a full sun area. I want to plant some fall vegetables and I'd like some recommendations (including whether it is too early).

Not really much this time of year due to sustained high heat.
New plants will usually not make it and get burned up before they can send roots deep enough into the ground to survive.
Wait until late August/early September to even think about putting seeds in a planter.
Now is the time to start seeds in those small seed pots to be planted in 6-8 weeks from now.
Oh, and make sure they are left in shade most of the day or they will not make it either. Most folks start them indoors under grow lights.

I've grown a lot of herbs and flowering plants, but am just getting into vegetables.

Most fall vegetables like cabbage, broccoli, Brussel sprouts, cauliflower require about 18 inches between plants and will fill in that space as they grow to maturity.
Stuff like leaf lettuces can be planted with about 6 in. spacing all around.
Swiss Chard and Kale need about a foot of space all around. Onions, green onions, garlic, beets, etc. are root crops and can be planted closer, but the bigger the root gets, like onions and beets, naturally the more space needed as opposed to garlic or green onions.
Broccoli are one of my favorite since they will produce more smaller heads/shoots after the initial large head is picked.
Cauliflower and cabbages are one and done for the most part, although you can pick and cook the large leaves as greens once the heads are harvested.

Okra, pumpkins, southern peas, etc but cover well w/ straw and keep well watered. Sunflowers are good to plant right now as well.
