What is the appeal of watching these two giggle like Jimmy Fallon as they deliver each others' bad race jokes? After that roast beef joke about his wife's snatch, I hope Jost goes solo.

This wasn't their best effort with this (mainly due to them giggling and not even being able to get the jokes out as mentioned), but of all the dumb shite SNL does for a while now, this bit of them trading jokes is one of the high points. Some of those have been hilarious in the past. The Rosa Parks joke in the past that Jost had to read was great.
I do think Jost is much better suited for WU than Che though. Not sure what it is, but Che just isn't funny to me at all most of the time.
I don't know if I truly buy into them never having seen the jokes beforehand, but the whole point of the bit just goes to show that offensive shite can be funny if everybody just relaxed a little bit and had fun. We need more of that shite, especially with SNL.

The jokes are funny but man can they hold in their laughter they’re done reading it? Jost losing it kind of tempers the punch for me

Because unlike Fallon, they don't see these jokes ahead of time.
Fallon was laughing at stuff he rehearsed all week, when what the skit typically called for was for the characters to not recognize the absurdity of their situation.
If you watched the rest of the Weekend Update, they chuckle at some of the jokes but pretty rarely as those are the ones they've been rehearsing.

I showed this to my wife this morning and said the same thing. It’s their way to be wholly inappropriate and politically incorrect and get away with it.
And that means they know those are types of jokes they WANT to be able to tell.
Roast beef was a tough one.

It makes zero difference to the quality of the telling that they didn't prepare ahead of time. Poor delivery is poor delivery. I also find it hypocritical that 364 days out of the year bad race jokes are off limits for SNL but these two get their little faceoff once a year. The quality of the show sucks so hard that mediocre "white people do this, black people do that" jokes are now considered high comedy for SNL.
