Deleted scenes that weren't included in LOTR extended editions

There were other scenes that Peter Jackson filmed but did not include in the extended editions including Sauron in physical form and what happened to Gimli and Legolas after the war was over.
I'm wondering why he didn't include these scenes? And I'm also wondering if there's any way to find them.

The deleted scene that is the most bewildering is when they leave the wood elves and are given all those gifts. I was totally confused in the Two Towers movie because I was seeing them use stuff and I had know idea where it was from. The scene was like 3 minutes tops. Why delete that from a 3 hour movie?
And your observation is correct. While there was enormous closure on the Hobbits and gandalf. There was none for those two characters.
I've only seen the extended version of Fellowship, I can say I liked the beginning much better in the extended version.

Something that's always bothered me about Fellowship is the Horn of Gondor. When Boromir is taking his last stand, one scene the horn is whole, cut to him taking another arrow, then cut back to the horn split in half hanging from his shoulder.
Surely PJ meant for that to happen, but I always wondered if there's a deleted scene where it actually gets cut in half.

No.
He actually had Sauron in physical form. I saw a brief clip of it on one of the featurettes. He then decided that was going too much against Tolkien and replaced Sauron with a cave troll.
The cave troll that fought Viggo in the final battle. That was originally Sauron.

Sauron fighting Aragorn at the Black Gate. A computer-generated Troll was placed over Sauron due to Jackson feeling the scene was inappropriate. Sauron is also seen in a beautiful form as Annatar, giver of gifts.
Also at the Black Gate sequence, Pippin was seen in the trailer holding a wounded Merry, a scene which takes place after the Battle of the Pelennor Fields upon Pippin discovering Merry under the oliphaunt.
More Arwen footage, including a flashback scene of her first meeting with a beardless Aragorn (seen in the Two Towers teaser).
Aragorn having his armour fitted during the preparations for the Battle of the Black Gate. This was the final scene filmed during principal photography.
An attack by Moria Orcs on Lothlórien. Jackson replaced this with a more suspenseful entrance for the Fellowship.

they weren't included because 10 years from now when they release the ultimate edition on the newest format, they'll get you to buy it because "we have footage you've never see before."

Any video of this on the web? All I keep getting in my searches is the mouth of sauron.

The closest we'll get to seeing this scene is the animated version in the behind the scenes footage. Originally Aragorn was supposed to be fighting Sauron himself at the Black Gate instead of a troll. Jackson however decided not to go with this solely because he felt this would completely betray Tolkein's story. It would have kicked complete arse to see Aragorn and Sauron fighting, but I respect Jackson for not doing it.

I honestly don't know what the hell Jackson was thinking with this scene, but am certainly glad it was cut.

Though completely different than the book, I think that scene should have stayed in there. It was pretty cool, and Christopher Lee is just awesome!
