To be fair, it wasn't like Pitt was especially young in Spy Game. He was 38 when it was released.
And Damon was 27 years old when GWH came out. (In the movie, Will celebrates his 21st birthday.)
You get a lot of mileage out of being a Hollywood hunk. You can play the ages of 18-25 well into your early 30s.

Macchio is one I truly don’t understand. His stated birth year is 1961. If we assume The Outsiders (1983) was filmed in 1982, that would make Macchio 21 when it was filmed.
I strongly suspect that Macchio was...how shall I say...not being honest about his age in order to get more mature roles.

There is no question that Macchio continues to appear younger than his stated age - obviously genetics are what they are and people do age at different rates.
My assumption is that you think he was fudging what, 2 to 3 years and that his birth year is closer to the Gen X border (~1965) perhaps as late as 1964?
Let's look at the evidence - Up the Academy was released in June 1980 - so we must assume filmed Fall to Early Spring 1979 - 1980 and Macchio (in his feature debut) would have been ~18 at time of filming and release, if his official bio/birthday is correct (November 1961).

Now, as this was directed by RDS (RIP), we have a very early appearance by RDJ (who would have been 14 or 15 at this time) -
I doubt we're ever going to get anything definitive. Folks at that age have already been significantly affected by genetics. I looked 14 until I was damned near 30. A kid I went to school with, despite being short looked like a grown man at 14. He showed up to high school as a freshman with a full beard and moustache.
Take John Hamm for instance. He's the same broad age category as Luke Perry and Jason Priestly (my age category) - and when they were auditioning for 90210, Hamm jokes he was auditioning to play their dad.
The only reason he doesn't look old AF in this pic is his douchey, "trying too hard" haircut when he was 25 going on 50.

Prior to the Internet, it was really hard to confirm background details about people you hired. Lots of actor and actresses told their agents, who subsequently told casting directors, phony ages (both younger and older) if they wanted to get a part that they weren’t the right age for.
Those ages become canonical, even though there’s very little supporting evidence to back it up. You can’t even go by high school records as a lot of actors prior to 1990 just straight up dropped out prior to 9th grade.
