What are the most "real" reality TV shows?

I don't think most "day in the life" type of shows are real, outside of legit documentaries (like an MTV True Life from the 90s, compared to The "REal" World from the 90s).
I think there are some competition-style shows that are real in their output while being fake in their competition. My best example for this is Forged in Fire (which I admittedly do love). I think the competition put on screen is pretty reflective of a realistic scenario that is not pre-planned (other than the time the production crew set a contestant's home forge on fire, accidentally, causing him to lose in the final), but the way it presents forging is very "fake" with respect to how forging atually works in the real world (due to the insane time constraints).
A recent addition to this discussion is my current show: Master Chef UK: The Professionals (has to be the UK version, b/c the AUS/US versions are shitty manufactured drama bullshite). I actually think the competition/action is real and the presentation on the show of cooking is pretty reflective of reality (getting 60-120 minutes for cooking is legitimately similar to real life, although not in the chaos of a real kitchen).

I think shows like "The Last Alaskans", "Life Below Zero", "Alaska: The Last Frontier" are pretty much reality based.
I especially like to watch "The Last Alaskans" that have centered on Heimo and Edna Korth, Tyler and Ashley Selden, Charlie Jagow and the late Bob Harte as the last to be able to reside in the area that is now a Wildlife Refuge with permits that only last until the death of their last child should they decide to adapt that lifestyle.

If I'm watching a reality show, I prefer them be the "realer" ones. There's no doubt that the drama and competition twists in shows like Inkmaster and Marriage at First Sight are artificially heightened, but these seem to at least contain people with legitimate talents or are relatively normal people, respectively.

Show is so addictive.
From a legal perspective, didn't think it was 100% real...bears and such.
But contestants seem to legit get sick and the winner usually ends up looking like a Gulag prisoner from starvation.

Probst has been showrunner since like 2003 - and I do believe he takes it seriously as his life's work.

Well that's why I said UK version of Masterchef only.
The US and Aussie versions are all manufactured drama.

I really like the baking shows but it’s hard to believe no one ever needs to consult a recipe. The bakers will be tasked with making a certain dessert and then everyone scrambles to the pantry for ingredients. Some contestants confess they haven’t baked that item in years but they confidently measure out the ingredients without ever wondering if they need 1 cup of flour or 1 1/2.
I think some of these shows fall under the same rules as game shows so cheating or helping one contestant is forbidden.
Survivor is pretty realistic but sometimes things happened that just didn’t make sense. Now with 90 minute episodes, they can show more and things make more sense…except when Mary Ann won. Grrrrrr!!!

Love after Lockup. TV Gold! Yes, you can tell when the characters try and hype things up or fabricate drama, but no doubt these are former felons and carry all the bad traits in their constant bad decision making.
