I can't really put them in order. Some great choices mentioned already, though. I will say that I almost feel like there should be a separate category for symphonic/goth vs everything else because there are so many women in the former it's not an exception it's the rule.
Angela Gossow - She was the first woman I heard do extreme metal vocals. When I first heard We Will Rise and Nemesis, like many I had no idea at first that a woman was singing. I bought the "Tyrannts of the Rising Sun" DVD and was really impressed by her performance, charisma and stage presence in addition to her rapport with fans.
Floor Jansen - First heard her with After Forever then Arjen Anthony Lucassen's projects, and later of course one of the highest profile gigs in metal, singing with Nightwish. I came to absolutely love Tarja's operatic sound with NW, and she did that better than anyone but Floor is able to bring so many vocal styles to the table and know how to use them in the right spots.
Tatiana Shmaylyuk - Her singing with Jinjer and ability to switch on a dime between cleans and growls has become legendary. Her clean voice is powerful and gorgeous - I would love to hear her do some work just using that. Her growls are powerful and some of the more articulate I've heard.
Simone Simons - Epica's singer has carved out her own legendary role in symphonic metal, building on what Tarja brought.
Doro - I admit I was really late to discovering her but she's just amazing, and a pioneer in being a woman who started doing it at a time when it was much harder to be accepted. Much much respect, and I've seen some recent performances that are still fantastic.
Honorable mentions off the top of my head, and probably forgetting some. Charlotte Wessels - Delain; Tarja Tarunen - ex Nightwish, Tarja; Cristina Scabbia - Lacuna Coil; Sharon den Adel - Within Temptation; Anneke van Giersbergen, ex The Gathering, solo, various projects.

Yeah, I had to add a sixth to make sure she was on my list. A metal chick I left off but really wanted to add is Melissa Bonny of Ad Infinitum. Clean and growl vocals, easy to look at.
