Another Crawfish Thread - Actual Meat Yield Price Per Pound

Someone please check my math on this one.
The actual price per pound of crawfish tail meat is currently around $73 a pound.
Live crawfish $11 per pound x 40 lb bag = $440 per bag
40 lb x 15% meat yield = 6 pounds of actual tail meat per bag
$440/6 lbs = $73.33 per pound.

To put this in perpective:
The actual price per pound of crawfish tail meat is currently around $73 a pound.

Eat Louisiana Shrimp. 50% yield. 35% loss in heads 15% loss in peelings. 2.50-3.00 dollars a pond.

I love going to a crawfish boil where some of the finicky people devein each crawfish. I ask them to pile the veins and all of that fat on the side for me. The best part.

I heard 10% yield is expected for actual meat. 90% of what u pay for is shell and water. That's why I dont bother with them.

This is why I almost never buy crawfish. Between the low yield, labor, and mess, its just an obnoxious food.

Your math is correct.
Before crawfish mature (thinner shell, small claws), early season, meat yield can be as high as 20-22%, but later in season, late April-June, as crawfish mature (harder, thicker shells, large claws) meat yield can be as low as 10-12%. Over an entire season it averages about 15%.
Most processing plants don’t start peeling (in volume), until product volume is high, and price of live crawfish decrease to a reasonable level - prior to that they are selling/brokering sacks of live crawfish. Traditionally, in past years, after Easter weekend, is when peeling began in earnest, and buyers would drop the price they paid for live crawfish, often substantially, and producers (farmers & fishermen) would get “upset”.
A good rule of thumb, in a “ normal” year (obliviously this year is not normal), is the retail price of 1 lb crawfish meat is 10 to 12 times the wholesale price per lb being paid to farmers (aquaculture ponds) or fishermen (Basin)

You’re right but you can simplify your math. $11 per pound / 0.15 = $73.3

I've always wondered about that. I've been to two boils where they had crawfish, and they were good.
But heck, I've got steer on my land that are cheaper than those little things.
