Biltong vs Beef Jerky

If you don't know what Biltong is, you're welcome.

Biltong > Jerky in every conceivable way.

Biltong is air dried beef. It maintains a moisture and flavor that cannot be found in the finest of jerky.

It's also very easy to create a biltong box and make your own by soaking the meat in vinegar, adding seasoning and hanging in a the box to air dry.

I've only used a friends and intend on making my own.

I think there are some proprietary secrets and different methods of seasoning but ultimately process of air drying seems standard and straight forward.

A project I'll take on when summer fades.

Had it for the first time in South Africa many moons ago. I agree, it's superior to jerky, and I don't think it's particularly close.

I got one of those "Man Crate" gift boxes for Chritmas a few years ago. It was a jerky box and had a bag of black pepper biltong in it. It was the first bag to be emptied, and I only shared one piece. It also came with an Ulu knife that I actually use and a little pry bar because the damn thing was sealed with industrial grade hot glue.

Those boxes are a good way to try different stuff. It had the biltong, bison, elk, aligator, salmon, ostrich, and I'm sure I'm forgetting something. The biltong and elk were my favorite.

On a side note: the word "biltong" does a number on spell check on my phone. I had to finally add it so it wouldn't keep correcting to "bolting".

Dehydrating will use heat over just a few hours.

Air drying takes weeks, obviously with much lower heat.

Definitely not trying to be pedantic, but biltong is simply the preparation method. You can use it for pretty much any meat and it would still be biltong. When I was in SA, there was a store that had like thirty different varieties on the wall, some of which were fairly exotic

making jerky is already tedious and time consuming as it is, I'll stick with the dehydrator here, but I will try some of this stuff

I used to fly through Johannesburg airport often and would load up on biltong. You could get that stuff in 25 pound bags there. They had huge slices of it hanging in the shops. Loved me some biltong.

I think the process for biltong can be really easy once you make your box, which is also seemingly easy.

You'd soak the meat in vinegar. Season it. Then hang it. It simply takes more waiting time.

There was only one bag of biltong. It was the peppered beef. The rest was regular jerky.

Oh, I figured that out when I got the sads after that first bag was gone.

The stuff is a treat, though, because unless you can buy a 25lb bag like ol' baw above, it is pricey.
