It's been awhile, but management 3200 was easy and incredibly useful when you get a job. I took it with Sauley years ago.
Personal finance was also extremely easy. I forget the course name but it's in the human services or human sciences department.

if you can't get at least a B in this class, you need to re-evaluate your life.
Sauley also keeps it interesting so actually attending isn't an issue.
Risk and Insurance is also a pretty easy one, its a night class but you pretty much only have to attend on the night he has a case study.

Back in college, I wanted the easiest classes too. Looking back, I regret not taking something useful. Obviously don't take something extremely difficult because this class won't be the focus of your career, but maybe a real estate or insurance class would be a much easier/useful elective.
Yea its easy saying this when youre "looking back".
Depending on what this guy is trying to do in his college career, your advice might not be very helpful at all. Why not take the easiest class? If im trying to get into vet, med, or dental school, there is no point in risking a grade that could lower your gpa.
