Bacon and cooked vegetables. Bacon outside doesn't smell up the whole house

Here it is in a nutshell. People buy them cause they are the latest fad on TikTok. I was one of them. Cooked everything I could think of on it for about a year. Finally figured out some things just taste better on a grill. Some things, especially if it’s just a small quantity is easier in the kitchen.
They are hot as hell to cook over which is not great in the south.
I still use mine but only for specific dishes.
They are great for anything habachi or stir fry. They are great for breakfast. They are great for quesadillas or fajitas. They are great for smash burgers. But for other stuff there is better methods.
I’m glad I have mine. I enjoy it when I do use it. Now that my kids have grown and moved out I may get rid of my 4 burner for a smaller version.

I don't get it either. I like the fire grilled taste when I'm cooking outdoors.

I had a vendor offer a free Blackstone for doing a consultation and after thinking about it I didn't go through with it. The combination of care and space just didn't make sense (I have a gas grill and a smaller charcoal one).

I cook on the gas grill a ton and do a lot of "normal" cooking on it. Other than the direct grill cooking, the side burner works with any pan/wok I want, and I can always put a griddle on top of the gas grill. Stainless griddle > carbon steel griddle, for those who know how to cook (and you don't have the same sort of care requirements). If I need cast iron or carbon steel, I can bring my pans out with me.

Just get something like this

People complaining about cooking with a griddle being hot as hell and it being miserable outside while objectively dismissing cooking over open fire is wild.

It's just an outdoor toy, we guys love toys, something new to play with. I've had the same results by just putting a cast iron plancha on top of the gas grill. Easy to control, can sear a steak, make smashburgers or pancakes, very low space and cleaning requirements.

I'm all about KISS.

Kinda the same category as the pellet smokers. I've spent many years developing the skill to control a wood smoker, to get it in perfect temp to smoke either salmon, bacon, pulled pork, ribs, whatever, I don't want to lose that skill to run a smoke machine any idiot can use.

I have one, I really only like it for cooking breakfast outside. It's a beast for breakfast especially when you're cooking for a bunch of people. I haven't used it in a while though and to be honest it's mostly a prep table for when I'm cooking on the green egg. It's a pain in the arse to maintain the cooking surface even with a cover on it. I don't hate it, but I like cooking on charcoal way more.

The Blackstone fad started before TikTok. The residential griddle market has now outlasted the "fad" parameters.

i've had two griddles. a 36" that was bigger than what i needed at home so i moved it to the camp and bought a smaller one for at home.

i enjoy cooking on it. We're an outside family so no big deal cooking outside in the heat. fried rice, fajitas, and burgers a good bit. you can not beat a smash burger on a griddle.

my only issue is that it's impossible to cook "healthy" on it. it requires a lot of oil (butter, coconut, etc). i mean, it's delicious but not great if you're trying to eat healthy.

I don’t get it either, but I must say that I use the griddle on my Viking range much more than I expected.

I even use it like an extra burner and put pots on it when I want a super low temp or just to keep something warm.

That being said, I have no interest in having one on my porch. I guess maybe I could try Japanese style teppanyaki.
