Brown gravy is ok but in a gumbo is better.
Cook it just like you would a rabbit.

Roast in dutch oven. It's very good.

You messed up, you need to keep it alive in your dresser drawer for a few days, and let it eat female under garments to give it a nice sweet taste, then cook it with potatoes and onions and carrots.

I've made gumbo with them, along with Andouille sausage.
I first season the nutria and grill the meat until about 1/2 done just to get a sear on the meat and then put it in the gumbo pot.
As it cooks down I remove all the bones and shred the meat so no bones are in the finished product.

Shoot with gun, if still kicking knock in head with boat paddle.
Cut off tail, throw nutria overboard.
Go to Sonic for dinner

Bone it all out.
Brown it in a black iron pot with salt and pepper
Add a lil bit of onion/bell pep/celery
Lil bit of flour.
Add some wine and chicken broth
Let sit on bloop bloop for 4-8 hours
Follow me for more recipes where i interject any species into the above recipe

There was a show on an outdoor channel where they were shooting nutrias in Louisiana somewhere. Cooked one in the end of the show. Looked pretty damn tasty. Can't remember whose show it was.
