You need to narrow your area a bit. 8 hrs from Baton Rouge could be Destin or the Riverwalk in San Antonio.

I haven’t been but have heard a lot of good stuff about the Buffalo river in Arkansas.

I’ve kayaked many of the rivers in the area. An enjoyable paddle would be to launch into lake Pontchartrain at FountianBlue state park and just paddle along the coastline. There’s a river inlet a mile or two to the east that you can go in and explore. I saw several gators in there and it gets tight with trees if you go up in there a decent ways.
Choctaw bayou off of the intracoastal canal near Brusly is another good one thats close to BR. There are a lot of gators in Choctaw bayou. I paddled through no less than 50 sets of red glowing eyes one night. Very uncomfortable feeling in the dark.
Watch out for tugs/barges in the intracoastal. The prop pulls water through it and you’ll have to fight to stay away from a tug.
If you’re not experienced, i’d go to Fountianblue state park and paddle the coastline.
Always WEAR a life jacket.
The Okatoma river is a big tubing/ kayaking river near Hattisburg MS. Pretty fun day. It’s the only “class rated” river in the area. Has a few ripples (rapids) and some small waterfalls to go down.

Cane Bayou in Mandeville. It's about a 2 hour round trip to/from the lake if you park and launch on Hwy 190. Tons of gators and beautiful scenery. Cane Bayou Launch Info
Bayou Lacombe is really pretty as well. You can launch on Main Street and head left for a less crowded paddle, or head right toward the lake. Just watch out for the big boats. Main St Launch
The Bogue Falaya is nice, but definitely more crowded and there are houses on either side of the river. You can paddle to the Chimes, but just know that the company that operates kayak rentals behind the restaurant won't let you stop there and tie up your kayak unless you rent from them. You can launch at the park: Bogue Falaya Park. The farther north you go on the river, the more scenic it gets. Water is high right now though, so there may not be as many beaches to stop at as there normally are.

Bayou Toro @ Anacoco, LA is a hidden gem in the Spring & early Summer when the water levels are high enough to float the 5 mile trip. It’s the only body of water in LA that I’m aware of that has Class 1 rapids (9 sets). There’s a shuttle & canoe rental service on site there too called Tackapaw Expeditions. Call ahead & ask about the water level though. It usually goes too low to float it all in late summer unless there’s been plenty of rain.

If you want white water you can paddle the Diversion Canal on the weekends.

I would highly recommend Black Creek south of Hattiesburg. It's a National Wild and Scenic River and largely inaccessible by motorized boats except small john boats, although they are rare. The upper reaches that are serviced by the canoe rental can get busy with day trips, but the stretches through the national forest east of Highway 49 are excellent scenery and quiet, with big sandbars for camping and generally good fishing.
There is also Red Creek near Wiggins. Almost just as nice as Black Creek, but surrounded by a lot of private land with less expansive sandbars. No canoe rental that services it to my knowledge.
There is Wolf River near Pass Christian as well. Very scenic area served by a small canoe rental outfit that will help you shuttle if needed. Mostly private land, but plenty of great sandbars to camp and good fishing. Less than 2 hours from Baton Rouge.
