Garfish Balls Recipe

Caught a few gar and never prepped em before. Someone mentioned gar balls as the way to go.

Found some recipes online but figured there would be some tried and true here.

Not sure about gar balls, but it fries up good and folks wouldn't know the difference between gar and catfish. Just cook it fresh, never frozen. Gets mushy otherwise.

My dad and I cooked garballs at the begining of quarantine because embarassingly that is all we could catch for a week. And the recipe that we made is pretty much just a big masking of the fishes flavor. It called for boiled potatoes, green onions, tonys, and breadcrumb then deep fried. Honestly they were not bad, but also not worth all the work in our opinons.

I do think rice would be a better substitute than potato and redfish/drum/sheepshead would be better than gar.

Boil it with ol bay until pretty tender. Drain. Mix together with a little breadcrumbs just so it sticks together and seasoning, I use slap yo mama, coat in egg wash and Panko and deep fry until golden brown.

Some folks mix it with onion and bell pepper and incorporate eggs in the fish after draining but I don’t.

I soak the gar meat in milk for about 30 minutes if it is out of the freezer. I then run it through my grinder along with some guidry's and then season it up with old bay. I hand mix with some bread crumbs and brown the piss out of them. I pull from the pot, add onion and brown. I then mix a little corn starch and cold water to make the gravy. add the balls back in and cook down. I also do a red gravy version with a roux and tomato sauce.

Boil them until there tender! put in a bowl with boiled potatoes. I use reds . chop up some onions, bell pepper and celery. cook in pan with senonings they way you like it. I like to use salt, pepper an a cap of louisiana boil and garlic. add to bowl. mix all together with your hands . make into patties or balls. dust with flower. fry, or pan fry in butter.
