Ground deer sausage recipes

Looking for some recipes that use ground deer sausage and would be good to share at a gathering.
My freezer has about 35 pounds of ground sausage that has turned out to be too spicy for my wife and kids. At this point I'm eating it solo unless we have company. I've already been using it to make a sausage cheese dip and sausage balls for potluck lunches with some extended family. I'm looking for some more ideas for cooking to share with others.
Generally I try to keep small amounts of spicy foods in the freezer. This was a combination of a screw up with the last deer I got processed and the sausage not being mild. Until one of my kids starts liking spicier foods, it's usually just me eating it. Here's my cheese dip recipe if anyone is interested:
Cheese dip recipe:
1 lb ground sausage
1 can rotel
2 packs of cream cheese
1 red onion, diced
1/2 or 1 can of corn drained
Cut cream cheese into cubes and put into pot with rotel and start melting the cheese and mixing with rotel on low heat.
Heat olive oil in skillet and saute red onion. Add drained corn to the skillet after onion has started to cook down. Cook as long as desired without burning. Pour corn and onion into pot with cream cheese and rotel. Keep the pot on low heat and stir occasionally.
Cook ground sausage in same skillet that was used to cook onion and corn until brown. Drain and add to pot.
Eat with choice of chips. Tostitos and fritos seem to be equally good from my experience.
Optional: Cook bacon in skillet first and crumble it into the pot. Use the bacon grease instead of olive oil to cook the rest of the skillet ingredients.
You can add a few handfuls of shredded cheese to the pot if you want more cheese.
Also, feel free to throw your choice of seasoning in if desired. Typically it's not needed, but it can help.

What’s ground deer sausage? Sausage is in a casing, ground meat is not in a casing.
We process our own deer meat and everything is made the same but one is in a casing (sausage) one is shaped into a patty (burgers) and one is left loose (ground meat).
We use ground deer meat in anything you’d use regular beef. If it’s spicy make a chili with it maybe.

The only person that mentioned casing was you. Dude clearly stated he had 35lbs of ground deer sausage. Aka breakfast sausage.

The dip sounds good, I’ll give it a try. As far as using up what you have, I’d make an omelette once a week until it’s gone. The eggs and cheese should tone down the spice a little.

I legitimately can’t tell if op has ground deer meat seasoned to taste like breakfast sausage or if he has regular ground deer meat that’s a tad too spicey for the family.

You can season and grind meat like you’re making sausage and not case it.

We call it pan sausage and it's my favorite way to make deer sausage. You can use in chili, dips, or thin fried patties eaten with biscuits and eggs.
And if you don't know what sausage balls are, you're not from the South.

That or breakfast sausage. I think only in S LA do people think link sausage when someone says deer sausage. The rest of the world thinks pan/breakfast sausage.

Breakfast sausage / pan sausage / ground sausage. I am just looking for some good ways to cook it and share at gatherings. This wasn't meant to be a controversial thread.

I don't eat smoked sausage too often, so I get all of my deer processed into fresh sausage. I cut it out of the casing when I want ground meat (and drain when cooking), or smoke it if I wanted smoked sausage.
I break it up and use it for everything you'd otherwise use ground meat for. Tacos, crunchwraps, chili, meat sauce for pasta, etc. I will also keep it together for breakfast sausage and burger patties.

lol, I know bud but the word sausage has me confused still.
Is this just ground deer meat? Loose meat that was passed thru a grinder mixed with pork? Guess I’m an idiot cause I have never heard of ground meat called ground sausage. Much less the question what to do with it. Use it just like you’d use regular ground meat with a kick to it. Or just keep making your chip dip with it, that does sound tasty and I’ve made similar.

Correct that’s what I do. But is called ground meat.
