How long does fish stay fresh on ice?

a redfish for example caught Sunday...cook today?

Fish that is kept on ice will stay good a long time. Easily a week in my experience and some people will even keep fillets on ice for up to two weeks.
ETA: Even whole fish, ungutted, should be good for almost a week. I've definitely caught fish Friday and not cleaned them till Monday and they were fine.

This guy is probably right about ungutted fish lasting up to a week if kept at refrigerated temperatures.. I admit I'm weird about food going bad and tend to throw it out if there's any question. Not sure why considering I've never gotten sick from eating old food.

How long do you think it takes fresh fish caught in saltwater to make it from boat, to distributor, to seafood store to restaurant? Less than 2 days?

You're good. As long as it's really on ice and is really cold. I don't have a problem letting them go 5 days or so. But I keep a lot of ice on them, I don't want them to get "cool".

I'll keep my filets on ice in a bowl in the fridge for about 6 days before I freeze. anything longer and it's just not fresh. I am a stickler on freshness. From the time my fish leaves the water, it is never out of the ice for longer than 2 or 3 minutes.

Whole fish should be good for 7-10 days on ice. Anymore than that and you are pushing it. Preferably I try to cook or freeze before 3-4 days.

I have posted this article no less than 10 times. It has changed the way I keep those $23.97 per pound fillets.
Stop fricking up your fish. You paid for them.
Keep your fish in in a bowl of ice in your fridge and you can eat "fresh" fish for two weeks.

Have some of y'all noticed what happens to certain species of fish when contacted with water? Tuna gets mushy, and mangroves get rubbery. As a result, I don't let those touch water and just clean with a knife and paper towels.
