Yeah they will. You wont see much production until it cools off though. Every plant is different but generally for blossoms to set fruit they need the overnight low to drop below 70 degrees. Some plants respond to photo period but in general your summer garden plants aren't gonna know the difference between spring and fall.

Will any variety grow in the fall? If not, which ones grow best??

Not sure. Maybe someone with more experience with gardens here in south Louisiana can suggest something for you.
