I know most here know this but here goes.
Cut all the red meat out!
Same goes for White Bass (Toledo Bend)
Also try marinating them overnight in Italian Dressing or soak them for a few hours in milk.
I have had people every year tell me they dont eat these fish because they taste too fishy.

I love the taste....
Good baked, grilled, blackened or in a sauce.
Again the key is getting all the redmeat out.

The smaller the better, anything over 27" goes back in the water.

Again there are too many better fish that you don't have to do this with. Not saying I don't eat them I prefer the smaller ones, I just don't think they are the best tasting fish. You can catch a speck and filet and fry it in the same breath.

The bigger ones I like to cut into 2"x2" chunks and throw in the gumbo.

This and only eat the small to mediums
I hear the 12 inch rat reds are the best

Cut out the blood lines, marinate in Tiger sauce for an hour. Coat with ground up garlic croutons or Panko bread crumbs and bake at 350.

My friend dared me to eat a sheephead filet right after he cleaned it, and sure enough, I took a big bite out. Not bad if you ask me...but then again, I like sushi

I don't mind the fishy taste at all.
