Speckle Belly recipes

I’ve never gotten a speckle belly but my son and his buddies got a couple this morning.

Going to cook them tonight.

Just sear the breast or what.

What’s everyone’s favorite?

Cook in crock pot with apple juice, onions, and apples until falling apart

Remove meat from crock pot and set aside with about 1 cup of the broth

Chop 1lbs of bacon into tiny pieces and cook until slightly crispy and fat is rendered

Pour goose meat, broth, and bacon bits/fat back into crock pot. Pour in your favorite bbq sauce and mix it all up

Serve up with little sliders

Look up Alex Patout's smothered rabbit recipe. Substitute speckle belly. I do this with wild duck and it's great!!

Marinate with honey, soy, ginger, garlic overnight or at least three hours.

Grill like steaks. Rest 20 minutes then slice and salt/pepper. Service with mashed potatoes and make a brown sauce by adding red wine, a stick of butter and pepper jelly to a pan with the leftover marinade. I use a whole jar of pepper jelly.

Brown them really good in a big magnalite or black iron. Stuff cavity with orange, apple, onion, sausage. Brown onions and garlic. Fill with stock and cook down for 3-4 hours. Serve over rice.

They breasted them???

I marinate in sherry and seasoning overnight. Next day brown it in bacon drippings, then you can add your onions,bell peppers etc, and about 1/2 qt of chicken stock. Roast on 350 for about 3 hours or until tender in a covered magnalite roaster. Baste every 30 minutes. Add mushrooms for the last 30 minutes. Once you finish you can thicken the gravy up if necessary and serve over rice.

Put goose in crockpot with leather boot. Cook 5 hours, remove goose, throw away and eat boot.

Smothered specks with mushrooms:

2 cleaned and quartered geese
2 diced yellow onions
2 lbs of button mushrooms
2 tbs Tony’s seasoning
1 (20oz) Coca Cola
1 bunch of green onions diced
1 bell pepper diced
1 tbs garlic powder
1 tsp black pepper
1/2 cup of vegetable oil
Water

Season geese quarters with Tony’s, garlic powder and black pepper and brown meat in oil stirring often on high heat. When meat is dark on all sides, add all onions and peppers and stir often for about 10 minutes then add the bottled of Coca Cola and enough water to cover meat in pot. Reduce heat to medium and cook 2 hours. Stir mushrooms in and stir occasionally for about 45 minutes. Serve over cooked rice and enjoy.

With just breast, grill to rare side of medium rare like a good steak and enjoy. Delicious bird.

Rub carcass w/grape jelly & your choice of seasoning. Pot roast in cast iron pot, covered w/onions, apples, & chicken stock for 3hrs @ 350°
Serve over rice, enjoy

Smoke over pecan to 135, slice razor thin across the grain, one of my favorites

I've never eaten goose and after reading this thread, I never will. Every single recipe posted sounds fricking foul.

Grilled over charcoal sounds foul? Specklebelly goose is not like a canada or snow. It tastes great. Of course you can do more with it, but you certainly don't need to.

You could seriously cook specks and wood ducks like you do a ribeye and it will be fricken good.

specks are the ribeye of the sky. cook like ducks. brown the hell out of em and then brown your onions. add water and simmer til tender. serve over rice.

I’m not sure why you wouldn’t just sear specks like a steak OP, yes. Or I always love wild game kebabs but I cut the meat into similar sized chunks, marinade if you want, and then cook the meat separate from the veggies as they take different times to cook usually.

But the better fowl are great just grilled, I save the other smothering and covering recipes for other ducks.

Straight slow smoked is great also for most geese.

We killed a few a couple weeks ago.
Don’t over complicate the recipe.
I usually just breast them out.

Smother down some mushrooms in butter. When mushrooms are done remove from pan and set aside on a paper towel to drain.

Salt and pepper the breast and pan fry in the mushroom drippings until medium rare. Put the mushrooms back over them and serve.
