Anyone have any experience with this? Any clue how to make it stop? TIA.

St. Aug will in the right conditions try to stalk and seed, this is a blessing. Let it seed out, dry, then cut. Enjoy

Those seeds are not viable and will not grow. St Aug is a sterile hybrid.

I just want blades not stalks.

My Bermuda fields are doing the same thing right now. When stressed (too much/too little water, long periods of heat, etc.), the plant will produce seeds in order to establish a next generation. Not much can be done aside from a growth regulator. The regulator will redistribute the carbohydrates within the plant to the roots. This causes a growth in the root system, as opposed to growth of seed heads.
ETA: I use Trinexapac-ethyl for Bermuda. I will run check the label for you to see if St Aug is listed for it

St Aug is listed on this label. Footnote A lists the grasses where seedhead formation is suppressed, but unfortunately St Aug isn't found there. Still may be worth a shot though.

Check out Embark PGR by Gordon's Professional. Looks promising for St Augustine. Good luck

St. Augustine is not a hybrid.
It's seed are very hard to harvest and are very hard to process thus you will rarely find seed for St. Augustine. Those seed will be very slow to establish also.
That said mow the seed back into the sod and you may have some new plants emerge.
