Thaw Time Before Grinding Meat

Everything I read online says to put the thawed meat in the freezer for a certain amount of time prior to grinding. What I can't find is if you cubed meat (approx 1") that is in the freezer how long do you thaw it before grinding?

I always try to keep it pretty frozen so it holds together better so not very long. It's much easier to deal with if it has a little stiffness to it...

As frozen as possible and not stall the grinder. It will start to thaw rapidly after starting to grind so for a second pass its nice if its still a little frozen.

I typically put trimmed frozen meat in 5-7# bags. I then pull them out and use a large bubba blade to slice push through the frozen meat and then begin grinding it partially frozen.
