What does the OB think about eating a 200 lb wild boar?

As with most any wild game, if proper care is taken in the field and during butchering and processing, it is gonna be great. But on an animal that size, you need to gut it and cool the meat fast, taking care to remove the necessary tissue to avoid the "gamey" flavor many complain about.

Sometimes big boars have a nasty smell, even when property handled. If that is the case, let them lay, otherwise eat them...

This. I tried many times and yes, had scraped many pigs in my life. Wild boars in my neck of the woods stink real bad. Heck, one can smell them a mile away.
Oh, if skinning and cut the piss bag, just trash it all together.
A young boar under 100lbs, skin out and cut the neck real short. They do have glands in their necks.
Another thing. Hose them off real good before skinning.

Here is my standard practice with any size Hog. Cut a chunk of meat out, fry it up and taste it. Taste like shite dont clean it. Taste pretty good then go ahead and process it.

Yes, I do, but I been fighting pigs on my place right before Katrina. Tried many things and gave up wasting my time.

I’ve eaten by numerous cooks and numerous times. Only once in a gumbo that I thought it was good. Again this is just my opinion.

I live in South Tx and I have killed 25lbs up to 250lbs hogs and at a minimum cut some of the meat up and cook it first. I have lost count on how many hogs I’ve killed and I have never had to throw one away.

I tried 2 this year. The mea didnt stink until you cooked it. I smoked the ribs from one in October and my smoker still smells like it when it heats up

If you clean it right it should be fine. I’ve heard people say you have to take their nuts off as soon as you kill them. I can’t say my way is 100% fool proof but it’s worked so far.
Main thing is do not let the hair or hide touch the meat. Use one set of gloves to open it up being careful to not touch the meat with anything. Peel the hide and hair back and cut it off getting it out the way. Use new gloves to take out meat.
Boats that big I’ve usually used just for frying. Roast, blackstrap, etc. can pound it and get it tender and fry up. Any other way and it’s too tough since you really have to cook wild hog to well done
