Does LTE work better than 5G?

This sounds silly on the surface, but when I put my iPhone on LTE only, it seems to work a lot better than 5G.

5G has a shorter range, so your phone spends more time switching between towers when you’re moving. After events like hurricanes, if you leave 5G on, your phone will keep desperately trying for a 5G signal that is oversubscribed rather than revert to LTE that is likely much stronger.

5g is just the modulation standard for sending digital data.
5g in theory should give you better "performance" compared to 4g using the available spectrum. But it's a lot more complicated then that and since not all cellular companies actually agree upon what is advertised as "5g", you can get varying levels of performance.
5g running on low bands will not deliver the same level of throughout as those using mmWave.
Long story short 5g is not defined the speed it's just how the data is packaged. The spectrum basically determines your speed, but in general 5g should allow for higher speeds compared to 4g LTE in the same spectrum.
However there are plenty of instants where 4g LTE connections will be faster than say 5G connections under 1ghz which generally give you better coverage.

Most of the new phones are 5g capable.
We have Verizon and don't need/want 5g and don't want to spend more to month for 5g service.
1. Will a 4g Verizon chip work fine in a 5g phone?
2. If I use a Version 4g chip in an unlocked 5g phone, are there is down sides understanding that it will only function at 4g speeds?

I am not even sure what you are asking. I think you might be confused. The only thing you move from one phone to another is your SIM card. It has nothing to do with whether or not you get 5g or not. Heck new phones dont even have physical SIM Cards anymore, most are eSIMs which you will have to transfer to with your service provider.

Once again same as question 1.
Basically every 5G phone can support 4G LTE as well. If there is no 5G service in your area, it will fall back to 4G LTE same as before.
SIM cards basically only carry your cell phone number, and it is what allows you to connect to a given cell tower on a carrier. It has nothing to do with your 4G or 5G modem found on the phone.

Not silly at all. Downtown Baton Rouge with AT&T my phone will display 5g+ and will not connect to anything. If if just shows 5g, it connects fine, but will still try to connect to 5g+ at random times, which makes the phone useless. I turned off 5g and connect on LTE and it doesn't stutter.

Over in Texas on T-Mobile i leave my phone on lte.. very seldom do i ever turn on 5g.

Isn't it harder for 5G to penetrate through obstructions between you and the tower?

The newer 5G+ is pretty quick, I've hit 700 mb on my phone, but its spotty, and out where there are fewer towers lte may work better because of 5G bandwidth being used by newer phones.

I’ve switched both my personal phone (Verizon) and work phone (AT&T) to LTE only.
If I’m standing still with a stable 5G connection, it’s great. Super fast. But I have also found that 5G is hit-and-miss when I’m out and about (the main time I’m using cellular data). It will say I have a 5G or even 5G-UW connection but I can tell while using the phone that it’s dropping out a lot. For example webpages won’t load at all for several seconds, then load instantly when it regains a good connection.
I don’t seem to have this problem at all on LTE, and I find the actual bandwidth difference on 5G to be largely offset by the instability.
This in Baton Rouge FWIW.

noticed it when i got my 5g phone and turned 5g off and never had a problem
