Gatlinburg/Pigeon Forge for adults

What are some of the best spots to slip away for someone not trying to be bored by "family" attractions. Any outdoor trail/walk locations, cocktail/dinner or distillery/brewery/bars. I've checked with Google but value this board's opinion more.

That's a haul from Pigeon Forge.
Go hike in the Park around Townsend, away from the crowds, and grab a beer at Blackberry Farms Brewery in Maryville. You could try to get into dinner at their hotel, but I think it's hard to do if you're not staying there.

My wife and I just went to Gatlinburg this past weekend for a little birthday getaway.
We booked a place through Stony Brook Cabin Rentals. There are dozens and dozens of places out there you can find but we absolutley loved the one we booked. It was very seclueded back in teh woods and up on some elevation so we got a grew view from the deck. It also had a nice grill/fire pit/hot tub but it was rainy all weekend so we never used any of it.
As for attractions, there are definitely a ton of family oriented things there on the strip. As for htat main drag in particular 2 days is PLENTY of time to take it all in. For brewery/bars there's quite a handful along that strip. Ole Smoky has two distillerys there I think each with plenty of tastings. There were multiple wine bars and moonshine spots as well also with tasting sessions.
Peddler is one of the more well known "nicer" dinner spots, I would recommend making a reservation a day in advance. Also towards that end of the strip there's a Calhouns, a Cherokee Grill, and some new place that we wnet that was great and hardly any crowds at all since it doens't have the name appeal as the others, it might've been our favorite though. Enormous portions (I ordered the Thanksgiving plate, honest to gosh I've alwasy wondered why restauanrnts don't serve thanksgiving meals other than November) and they bring you a vegetable soup thing for free as a starter like other places might bring bread (they also bring bread too).

How strenuous for hikes? Chimney Tops, Abrams Falls, Alum Cave, Rainbow Falls, Trillium gap, Gregory Bald are some of the more popular trails depending on your ability to hike.
See if you can get an Uber or DD from where you are staying and do a tasting crawl on the strip. There are tons of crappy wine, moonshine, mead, and whiskey distillery type places on the strip all with like $5 tastings. It’s fun to walk around and try to hit as many as you can. It’s a little harder on busy weekends because there will be lines at some of the places.
Food wise there really isn’t a standout place. Not like in West NC. People here tend to love the Copper Cellar regional chain places like Calhouns, Chesapeakes, Cherokee Grill, and Smoky Mtn Brewery. Local goat is another regional chain that gets a lot of love, it’s pretty good. I hate the Apple Barn, but people love it too. Tastes like frozen food to me. Lots of ok local chains and meh food. Peddler and Greenbriar are liked. Blackberry Farm is phenomenal if you can get in or stay there. Foothills Milling Company is sorta close in Maryville and very good.
Also heads up, parking fee is now required to park for more than 15 minutes in the national park.
