We usually go to the beach in July, but circumstances may require a late May schedule.
Is there a noticable difference at that time?

I'm gonna take a guess before looking up averages that the water temp is more comfortable in May than the hot tub hot temp in July.
May
Max: 28.3°C / 80.1°F
Avg: 24.7°C / 76.5°F
Min: 21.1°C / 72.9°F
July
Max: 31.4°C / 87.1°F
Avg: 29.6°C / 85.3°F
Min: 27.8°C / 83.5°F
Looks like roughly 10*F difference. Water temp by me is about 73*F and it's been nice swimming in, a few more degrees at that 76*F average and it's probably perfect in May

It’ll be cooler than July but not impossibly cold. Bigger issue will probably be a crowded beach if it’s Memorial Day weekend.

The gays used to take over parts of PCB for Memorial Day.
Not that there is anything wrong with that.

It's the Gulf of Mexico, it's never as cold as the Pacific

We used to have a place in Destin and July/August was always the worst. Late May is about on par with September for air and water temps. Warm enough to swim but not too hot or cold. Spring break was always too cool to get in the gulf. But most condos have heated pools that they’ll warm up for that time of year and in the fall.
