Been telling my wife that Whole Foods or Walmart+ is an option, but she's weird about other people picking our fruit. I'll probably have one of them deliver the bulk items (drinks, bread, bakery crap...), and just run in for the dairy, deli & produce items.

I would make the majority of your dining reservations for breakfast. It sucks having to get up early to make it, but then you have the rest of your day and you don’t have to worry about planning around a character lunch or supper.
If you rent a stroller I recommend Kingdom Strollers in Orlando. ( Not directly affiliated w/ Disney) They deliver the stroller to the front lobby of your hotel the day you get there and come get it the day you leave, it was super easy.

Every kid is different, but in general, 4 year old is fine for Disney.
But, as another poster mentioned, the OP's itinerary is insane and the kid will be worn out by the third day.

Yeah, we did 4 parks in 4 days. Did MK 1st day, rope drop until about an hour after fireworks. HS the next, rope drop until dinner. 3rd day was Animal Kingdom, we were completely exhausted. Went late, did the Safari and that was about it. Went back to the resort and chilled by the pool.
Disney is not a relaxing vacation, it is fun, but not relaxing. After going I would have done a rest day on day 3.

I would plan the EPCOT day on a weekday and do the Food and Wine festival earlier in the day. F&W can make the World Showcase area a little rowdy on weekends and at night. I would definitely go to the Halloween Party. The Boo to You Parade is very good and the Hocus Pocus show is awesome. If you don't, I would advise(like a previous poster said) to actually go to MK the day of a party. Because it closes early(6PM), people choose other parks on those days. I find we get more done before 6 on those days than we normally would all day on a regular park day. Make sure to catch the shows at Animal Kingdom, the Lion King and Finding Nemo. Avatar at night is really cool looking and the walkway is bioluminescent and lights up as you walk on it.

I would skip Akershus. Yea they have the Princesses but the food isn’t very kid-friendly. At least it wasn’t back in 2019 when we went.
Also the Halloween party wasn’t worth the money, honestly. My daughter was 4.5 when we went for reference.

She realizes that the vast majority of shoppers are women? She's just traumatized because of what you bring home. My ex was super picky as well, and she's never complained about multiple instacart orders in Orlando and other vacation spots.
OP, be warned, Epcot is a wasteland for a 4 year old. Soaring is the only ride of note, and every city has an aquarium. Food and wine is fun for adults, but for younger kids, there is no way I'm wasting a pass on Epcot thinking they're going to get anything out of it.
The most common sight you will see after lunch is kids with their legs hanging out of strollers passed the F out. Disney and Paris seem to smoke kids under 10 like they were the Hawaiian countryside. (too soon?)

Does a 4 year old give 2 shites about taking a boat "tour" of Mexico, or a fake talking turtle? Compared to WK, Epcot just doesn't rate on keeping a kid that age engaged.

Yes, both (as well as the others I listed) attractions are popular with 4 year olds.
You said Soarin is the only ride for a 4 year old and you are wrong. There’s plenty more that’s appropriate and enjoyable for a 4 year old.

You’ve gotten a lot of good advice in this thread. I’m going to advise you to look online for tips on how to maximize the points you earn in the Buzz Lightyear ride in Magic Kingdom. There are some targets that are ridiculously more valuable than others. Don’t tell your family and walk away with bragging rights or make a bet with the wife before the ride.
