My son recently gave me a couple of dozen duck breasts (no fat/skin off). I've looked at Besh's and Folse's recipes and their recipes are mostly for whole duck with skin/fat on. I'm thinking andouille and okra gumbo but not sure how to handle the breasts. They are very lean with little fat and d...
