End of March. Will have to try haggis, any recommendations for the best restaurant? Also any suggestions for sightseeing. Have a day trip to see the Falkirk Wheel.

The Castle and the Palace.
Go to Celtic Craft Centre and invest in a real kilt. Don't go to one of the tourist / clothing stores for this.
Have lunch and a ping at The End of the World pub.

Agree with first reply about The Scotch Whiskey Experience. It's close to the Edinburgh Castle, I'd recommend doing both of those activities consecutively.
I also enjoyed Arthur's Seat Hike. Its a nice little outdoor activity in the city with a pretty good payoff if the weather is cooperating.

Scott's Monument is pretty cool.

Edinburgh Castle, Holyrood Palace, and St. Giles were definitely great, Arthur's Seat would provide a awesome view of the city.
I didn't see it, but the Royal Yacht is in the northeastern part of the city, and I have heard that it is interesting to see.
