You can always go buy a few acres of land, do the dirt work to build ponds, buy the pumps and irrigation equipment (don't forget the water rights), buy the "seed" crawfish, buy the supplemental feed, and buy the boats and traps to harvest the crawfish if you think you can harvest your own crawfish at a lower price.

and I left out the fuel/energy costs to run the pumps and boats.
